Bacon Wrapped Smoked Pickles

Bacon Wrapped Smoked Pickles

Prep time: 15 minutes 

Cook time: 2 hours 

Servings: 3-4 


Ingredients


  • Jar of pickle spears 

  • Thin cut bacon

  • Bbq rub of choice 

  • 1 cup mayo

  • 1/2 cup milk

  • 1 tbs fresh chopped dill

  • 1 tbs fresh chopped chives 

  • 1 tsp onion powder

  • 1 tsp garlic powder 

  • Salt and pepper to taste 

  • Juice from 1/2 lemon


Directions


  1. Preheat grill or smoker to about 300 degrees F. For this I used the charbroil pro series grill that can convert to a charcoal grill. I then used charcoal and smoking wood chunks. 

  2. Wrap each pickle spear in a slice of bacon. Season with rub and place on the grill or smoker. 

  3. While pickles cook, make ranch dressing. Combine the listed ingredients above and stir. 

  4. Once bacon is done to liking on the pickles, remove from grill or smoker. Drop in ranch and enjoy!
