Cajun lobster rolls

Lobster rolls
Prep time: 15 minutes
Cook time: 30 minutes
Servings: 4-6
Ingredients:
8 lobster tails
1 stick of butter
Tony Chachere’s original seasoning
4 tbs fresh chopped chives
2 tbs Dijon mustard
Zest and juice from two lemons
Hawaiian rolls
One bag of Cole slaw
2 Olive oil
2 tbs apple cider vinegar
Instructions:
Preheat oven to 400 degrees.
Combine cole slaw, olive oil, and apple cider vinegar in a bowl. Season to taste with Tony Chachere’s original seasoning. Set aside and let marinate for 30 minutes.
Cut off little crawlers on lobster tails and then cut in half. Liberally season with Tony Chachere’s original seasoning. Bake in over for about 12 minutes.
While lobster tails bake, prep our sauce. Melt butter and add in chives, Dijon mustard, lemon zest and juice, and 1 tsp of Tony Chachere’s original seasoning.
Remove lobster meat from tails and roughly chop. Toss in sauce and serve in toasted Hawaiian rolls topped with Cole slaw.
