Cowboy casserole


Prep time: 5 minutes

Cook time: 30 minutes

Servings: 4-6


Ingredients:

  • 1-1.5 lbs ground beef

  • Few slices of bacon diced

  • 1 lb bag of tater tots

  • 1 can tomatoes with green chiles

  • 1 can sweet corn

  • 1 can cream of mushroom soup

  • 2 small yellow onions diced

  • 1 green bell pepper diced

  • 2 cups shredded cheddar cheese

  • Tony Chachere’s to taste


Instructions:

  1. preheat flat top to medium heat.

  2. Add ground beef and diced bacon to one side and tater tots to the other. Season with Tony’s.

  3. While those start to cook, dice onion and bell pepper. Add to flat top.

  4. Mix the ground beef and bacon with the onion and bell peppers. Continue to cook until beef and bacon are cooked.

  5. Add tomatoes and corn and cook for a few minutes more.

  6. Add cream of mushroom. Stir to combine and continue to cook for a few more minutes.

  7. Stir in the tater tots.

  8. Turn off heat and melt in cheese. Enjoy!
