Grilled chicken gyros


Prep time: 1 hour

Cook time: 30 minutes

Servings: 4


Ingredients for chicken:

• 1.5 lbs chicken breasts or boneless skinless chicken thighs

• 2 tbs olive oil

• 1/2 cup Greek yogurt

• 2 tbs red wine vinegar

• Greek seasoning


Ingredients for tzatziki:

• 2 cups Greek yogurt

• 1/2 cucumber deseeded

• Greek seasoning to taste

• juice from 1/2 of a lemon

• 2 tbs olive oil

• 1 tsp fresh dill

• 2 cloves minced garlic


Ingredients for veggie topping:

• 1/2 purple onion diced

• 4 roma tomatoes diced

• 1/4 cucumber diced

• 1 tbs olive oil

• 1 tbs red wine vinegar

• pinch of Greek seasoning


Instructions:

1. Deseed cucumber and dice it up finely. Combine with other tzatziki ingredients. Let stand in fridge for atleast 30 minutes.

2. Combine chicken and marinade ingredients. Let stand in fridge for atleast 30 minutes.

3. Combine chopped veggies with olive oil, red wine vinegar, and Greek seasoning. Let stand in fridge until time for topping.

4. Cook chicken on grill until internal temp is atleast 165 degrees F. Let rest and slice.

5. While chicken is resting heat up some pita bread on grill.

6. Spread tzatziki sauce over pita bread. Add chicken. Add veggies and enjoy!
