I’m taking of of my favorite pasta dishes and turning it into a pot pie! The result is amazing and a huge hit! Find the full recipe below.
Mary me chicken pot pie
Servings: 6
Prep time: 15 minutes
Cook time: 60 minutes
Ingredients:
* 3 chicken breasts
* 1 onion diced
* 8 oz sliced and roughly chopped Bella mushrooms
* 4 oz sun dried tomatoes (about half a jar)
* 2 big handfuls of spinach
* 1 tbs minced garlic
* 3 tbs butter
* 1 cup chicken broth
* 1 pint heavy cream
* 5 oz of grated Parmesan
* Creole seasoning
* 1 box red lobster biscuit mix
* Cheddar cheese
Instructions:
1. Preheat skillet to medium high heat.
2. Butterfly chicken breasts. Season chicken breasts with olive oil and creole seasoning. Melt butter in skillet and add chicken. Cook chicken for about 5-7 minutes per side or until 160 degrees internal. While chicken is cooking, dice onion and mushrooms.
3. Remove chicken from skillet and add onion and mushroom. Once they are browned and softened, add minced garlic. Cook for another minute or so and then add chicken broth. Bring to a boil. Reduce heat and simmer until reduce by about half. While it is simmering, dice chicken.
4. Add in sun dried tomatoes and chicken. Stir to combine.
5. Add heavy cream and spinach. Cook until spinach is wilted and softened.
6. Remove from heat and melt in Parmesan cheese.
7. Make biscuit mix according to box’s instructions. Place on top of skillet.
8. Bake at 400 for 20 minutes, or until top crust is browned. Remove and enjoy!
