Pizza on the flat top
Prep time: 90 minutes
Cook time: 15 minutes
Servings: four 12” pizzas
Ingredients:
4 1/2 cups pizza or bread flour
2 tsp instant rising yeast
1 1/2 tsp sea salt
2 tbs olive oil
1 1/2 tbs sugar
1 1/2 cups warm water
Instructions:
In a large bowl, dissolve the yeast into the water. Add two cups of flour, oil, salt, and sugar. Stir to combine. Add remaining flour and stir until dough starts to form. Dump dough onto a surface and knead for 5 minutes, adding flour as needed.
Transfer dough to a greased bowl and cover with plastic wrap. Let rise for about an hour.
Take dough out of bowl and cut into 4 dough balls. Stretch even dough ball until your pizza crust is formed. TIP: make pizza crusts small enough to manage with a spatula. If you don’t have a large spatula, I recommend making 5 or 6 pizzas instead of 4 because it will be easier to manage when flipping on the flat top.
Light flat top to medium heat. Drizzle with olive oil.
Place pizza crusts on flat top and cook for 4-5 minutes. Flip pizza crusts and drizzle with tomato sauce. Continue to cook for another 4-5 minutes and remove from flat top.
Reduce heat to low. Place pepperonis down on flat top, followed by a generous amount of cheese. Place pizza crust, sauce side down, over the toppings. Cook for about 2-3 minutes and flip. You can remove your pizzas at this time or leave them on to get a crispier crust. Enjoy!
