Pasta with a cajun twist!

Pastalaya
Ingredients
2 lbs chicken breasts cubed Â
1 lb andouille sausage thinly slicedÂ
1 yellow onion dicedÂ
2 bell peppers deseeded and dicedÂ
2 jalapeños deseeded and dicedÂ
4 green onions. White and light green parts thinly sliced
1 Tbs minced garlic
14 oz can petite diced tomatoesÂ
4 cups chicken brothÂ
16 oz spaghetti pasta
3 tbs tomato pasteÂ
2-3 Tbs Tony Chachere’s original seasoningÂ
Directions
Preheat skillet and oil to medium high heat.
Add diced onion and chicken. Season with Tony’s. Cook for a few minutes. Add peppers, jalapeño, green onion, and sausage. Cook until sausage is brown and veggies are soft.Â
Add tomato paste, minced garlic, and diced tomatoes. Cook for another minute or two.Â
Add spaghetti pasta and chicken broth. Bring to a boil. Reduce heat, cover, and simmer.Â
Cook until spaghetti noodles are done stirring occasionally.Â
Turn off heat and season to taste with more Tony’s!Â
