Creamy cajun chicken pasta
Prep time: 15 minutes
Cook time: 45 minutes
Servings: 3-4
Ingredients:
1.5 lbs chicken breasts
1 onion diced
4 cloves garlic finely chopped
1 cup chicken broth
1 1/2 cup heavy cream
2 tbs tomato paste
1 cup finely grated Parmesan cheese
2 tbs butter
Olive oil
Tony Chachere’s original seasoning
Paprika
Parsley to garnish
Instructions:
Preheat skillet with oil and butter to medium high heat.
While skillet heats, butterfly chicken breasts and generously season with olive oil, Tony Chachere’s original seasoning, and paprika.
Cook chicken for 5-7 minutes per side or until done. Remove and set aside.
Add diced onion to skillet. Cook until soft.
While onion cooks, boil pasta.
Add chopped garlic to skillet with onion. Cook for a minute or so. Add chicken broth and bring to a boil. Reduce heat and simmer to reduce by half.
Add in tomato paste and stir to combine.
Add in heavy cream and bring to a simmer. Once it’s reached a simmer, remove from heat and melt in cheese. Season to taste with more Tony Chachere’s if desired.
Slice chicken and add to skillet. Enjoy!
