Burnt Ends
Ingredients
3-4 lbs whole pork belly
Tony Chachere's More Spice seasoning (or seasoning of your choice)
Yellow mustard
6 oz of Dr. Pepper
1 cup of bbq sauce
1/2 cup of honey
8 tbs of butter
Directions
Preheat smoker or grill to 250 degrees Fahrenheit.
Cut pork belly into small squares (about 1.5" x 1.5") and transfer to bowl.
Add yellow mustard to pork belly. Mix using your hands. Make sure everything is coated.
Next, season the pork belly with the spice seasoning (in this recipe I use's Tony's). Again mix with hands. Add about 5 tbs of seasoning.
Add pork belly to your smoker fat side down. Smoke for 3 hours, or until you have a bark that you like.
Remove pork belly from the smoker and place in a tray. Add Dr. Pepper, bbq sauce, honey, and butter to tray. Mix to combine. Cover tray with foil.
Return pork belly to the smoker and cook covered for 1 hr and uncovered for another 30 minutes. Enjoy!
