Elote Pasta Salad

Simple, tasty, and served cold. This recipe combines two of my favorite things: elote and of course, pasta. It's the perfect summer side or appetizer!




Elote Pasta Salad


Ingredients

  • 1/4 cup sour cream

  • 3/4 cup mayonnaise 

  • 3 mini corn on the cobs

  • 1/2 box of 16oz rotini pasta

  • 1/2 lb bacon diced

  • 1/2 purple onion diced 

  • 1 tsp Tony’s bold

  • 2 tbs freshly chopped cilantro

  • Juice from one lime 

  • 1/4 cup cotija cheese


Directions

  1. Boil pasta until done to liking. Brown diced bacon. 

  2. While pasta and bacon cook, place corn on the cob on the grill. Grill over high heat until charred. 

  3. In a mixing bowl, combine all ingredients listed above. Slice corn off of the cob into bowl. Stir to combine and let sit in the fridge for at least 30 minutes. Enjoy!
